Masticha oder Mastixgummi von Chios ist das kristallene Harz der Mastix-Pistazienbäume (Pistacia lentiscus) und wird ausschließlich auf der griechischen Insel Chios produziert, wo er seit Jahrtausenden die Quelle eines Großteils des Reichtums der Insel ist. Im Juni wird die Rinde der Pistazienbäume angeritzt, so dass das Harz auslaufen kann. In den Handel kommt Mastix als Mastix electa (hellgelb, erbsengroß), Mastix naturell (bräunlich) und Mastix Bombay (sehr dunkel).

Mastix hat eine rätselhafte Substanz, da man Masticha gleichzeitig als Gewürz, Weihrauch und Medikament benutzen kann, mit nachgewiesener günstiger Wirkung bei Magengeschwüren und anderen Magenbeschwerden und für die Mundhygiene. Sein einzigartiger Geschmack bietet sich sowohl für süße als auch pikante Gerichte an und wird deshalb als Gewürz vielseitig benutzt.

Der Mastixgummi passt wunderbar zu allem, von Zitrusfrüchten über Tomaten und Schokolade bis hin zu Cremes und Joghurt. Um es zu benutzen, muss man es zuerst in einem Mörser zerreiben, entweder mit etwas Salz (für pikante Gerichte) oder mit Zucker (für Süßspeisen).

Verwendet wird Mastix nicht nur als Würzmittel, sondern auch in der Kosmetik und als natürlicher Kleber. Und nicht zu vergessen, als dominantes Aroma im Masticha, einem Alkoholgetränk, das ähnlich dem Ouzo in Griechenland getrunken wird.
